Abstract

To address the issue of adequate nutrition, mothers play a crucial role, particularly in household nutrition. This includes preparing meals, selecting ingredients, and determining menus. Increasing mothers' knowledge and skills in preparing nutritious meals is essential. The purpose of community service is to increase PKK participants' understanding of healthy eating and their ability to utilize local foods, such as pumpkin and butterfly pea flowers, found in their neighborhoods, to improve the nutritional value of their families' meals. The results of the PKM show that there is an increase in the knowledge of PKM participants reaching 90% (before the PKM was conducted, none of the participants were able to answer the 10 questions. After the lecture and training, 9 of the 10 pretest questions could be answered by the participants). PKM participants, namely the PKK Women of Simalingkar A Village, understand about healthy food, and are able to utilize local food ingredients such as pumpkin and butterfly pea flowers that are around the residential environment to improve the nutrition of family food. PKM participants are able to practice how to make pumpkin wet noodles and butterfly pea flower wet noodles.
